It’s merely day 2 but I am on a roll with these recipes! Which makes me think one of them has to be terrible relatively soon. The nice lady in Publix explained Quinoa to me as mini, gluten-free pasta (first time I’ve ever tried it!) This meal made me feel like the healthiest person in the world – I even added a dash of cinnamon in the bean & corn portion. Totes worth it! Especially as a summer din din dish. ugh god I’m going to be so domesticated after this challenge!

This looks delicious! I’m going to have to try this recipe. Quinoa a great source of protein. It is actually a seed, not a pasta. (Couscous looks similar, it is a pasta). If you haven’t tried bulgur, it is great too. Just chopped up wheat that has been pre cooked. It cooks up like quinoa but is chewier.
