I just returned from Vermont and besides the beautiful setting the next best thing was the Vermont cheese! Between the breweries and the decadent cheese I probably put on a few extra pounds but it was well worth it! One of my favorites was blue cheese with a dab of honey… amazing. Anyway, I’ve been doing research on more cheeses because life is too short to not enjoy this tasty treat!

I was inquiring about other diuretics that could help me maintain my somewhat girlish figure since I am in a wedding this coming Saturday and my friend Leslie suggested her favorite soup! It’s filled to the brim with tasty veggies and tilapia! I was telling her how much diurex pills makes me feel like a dying water buffalo and I needed a better and healthier solution! Ya know, one that doesn’t suck the life out of you. SO! for the next 3 days this is what I will be eating for breakfast and lunch… Thanks Les!
recipe||
1. Boil about 4 cups of water and with lots of celery and celery leaves (you can use the inside pieces of the celery stalk – the ones that are skinnier and not as crispy – I always seem to have these left over), little bit of diced onion, 1/2 of a tomato (optional), fresh garlic (or garlic powder), small chunk of ginger root (or dash of ginger powder) and favorite herbs (I use parsley). Cook until celery is soft – the water should reduce to about half.
2. Add in 2-3 tbsp apple cider vinegar (BRAGGS brand – can get at health food store for like 5$), continue cooking on low.
3. Add in tilapia – I put in about 3 servings – so about 20 oz raw.
4. Simmer until fish is done. Put in bowl - refrigerate and it is best eaten the next two days with some CRYSTAL hot sauce.
I’m on a huge spinach kick so making these spinach burgers was something i was really looking forward to except this is how they turned out.
I think, well I don’t know, but I’m pretty sure it was the George that blew my operation. My awkward mind was all… ”burgers go on a grill not a skillet” and didn’t take into account how fragile these baby greens were. Since we’re on the up & up here – the plus side was that I had delightful scrambled spinach & eggs instead. Thumbs up (way up if you make them right!)
Coincidentally I’m having dinner at taverna opa this evening where all you do is dance on the table and throw stuff everywhere. I seem to feel most at home when I can disregard another’s property. Happy Friday!
I’m so in the mood to go gung-ho on an awesome project. I’m working on my own project for a little “thank you box of favorites” for choosing Waldo’s Secret Garden as an event venue because isn’t it just really nice to be appreciated? Duh. I cooked this all wrong, wrong, wrong. In my defense I was extremely tired and more interested in a re-run of SNL. I barely followed the directions so my version came out less than perfect. Here’s what it looks like and consists of. Delicious and beautiful, right? Yeah, mine looked like a wet dog. Mah bad.
I had something similar to this at momofuku milk bar in NY a few months ago and was addicted so it was a no brainer that I was going to try to recreate such a delightful treat. MAKE THESE. If even to just keep in your fridge and pop one down your gullet to catch a sweet fix. I do not have a sweet tooth so I’m pretty particular when it comes to dessert. This recipe will stay in my back pocket forever.
side notes: I used confetti cake & almond silk milk instead
I’m really enjoying this cooking thang I got going on. This time I made a little video you for guys! Shot with my iPhone! wahhh! Yah. APP : 8MM. This was really good. It lacked a bit of taste but that’s clearly my doing – I must’ve missed a step. I’m an apathetic chef I’ve learned. I just skim through recipe directions, oops. All in all, not a waste of time!
